Kashmiri chilli Powder is used in Indian cooking, particularly in the relatively softly spiced meat dishes of the north. Kashmiri chilli imparts a wonderful deep red colour into your Indian/Thai/Oriental dish without adding too much heat (Kashmiri chilli has a relatively low level of heat - hotness comparable to the ancho chilli or mulato chilli. Kashmiri chilli can be compared to Aleppo pepper (although it is not as sweet) in that it provides a complex & building heat that lingers on the palate
